Trust me, you are going to want to try this Churro Ice Cream Recipe. It’s the perfect treat for Cinco de Mayo, or Cinco de Cuatro, depending on what you celebrate. I love Mexican food! So naturally our family loves to make a large meal filled with our favorite Mexican dishes! But dessert isn’t always served. To be honest, I’m not crazy about flan. But for my last birthday my hubby got me the Kitchen Aid attachment Ice Cream Maker!!! Our previous ice cream maker (Mint Oreo Ice Cream Recipe found here) was from our local Thrift Store, and it was great! But this ice cream attachment is a dream!!! No more hassling with the ice and salt. Sometimes as I was layering my salt and I would spill some salt in the ice cream.
The process is so much easier with my new Kitchen Aid Attachment! I mixed the ingredients and then 25 minutes later it was ready to freeze. They do suggest you leave your ice cream in the freezer for at least 6 hours. I told our kids we would have it the following night. I am thinking we are going to make a lot of ice cream this summer! Last summer we tried to make a new flavor each week. It was pretty delicious! But my thrift store maker was getting burned out. And don’t ask me why I’ve waited 4 months to finally make some ice cream. Do you ever hesitate on new things? Even if you know they aren’t hard, but the extra work of learning is something you need to prepare for. Maybe it’s a mental thing. But this could not have been easier.
But now I want this awesome ice cream container for my freezer!
I mean just look how yummy this recipe looks! I am sure we will be making this again in the summer! The secret ingredient (besides love) is Mexican Vanilla Extract!!! My sweetie’s boss picked some up for us last year and I have been trying to decide what we should make with it! The taste is perfect!!! But feel free to sprinkle some more cinnamon and sugar on top, for presentation. I picked up some real churros from Sam’s Club last night. My kids were so excited!!! You can serve them together or just the ice cream on it’s own.
- 2 eggs
- 3/4 cup sugar
- 2 cups of whipping cream
- 1 cup milk
- 1 teaspoon Mexican vanilla
- 1 teaspoon cinnamon
- 1 teaspoon sugar
- In your mixer whisk eggs until light and fluffy.
- Add sugar slowing and continue whisking.
- Pour in whipping cream and milk to blend.
- Add vanilla and mix for 1 minute more.
- Add to your Ice Cream machine and follow their directions. I mixed mine for 25 minutes and added a teaspoon of cinnamon and sugar each for the last two minutes.
- Put your ice cream in a freezer container and try to be patient.
