Menu ideas are especially crucial during busy months like October and December. Every year I tell myself I’m going to start sewing in the summer, but man is it hard. Our summer is only 8 weeks long and with trying to work on our summer fun list, and school starting in July, it just doesn’t happen. (but I’m sure I’ll try again next year)
I have been working on costume ideas and have even bought some material. And with fall break on the horizon I’m really hoping to make a dent. And I have an October birthday party to work on. Needless to say I need some quick and easy meals this month.
- Nachos (It’s General Conference so we are keeping things low key, plus we will be too full from Cinnamon Rolls)
- Burrito Bowls
- Tortilla Soup
- Lemon Chicken
- Chicken Salad Sandwiches
- Hot Dogs
- Left overs
- Calzones
- Pizza Party Family Night
- Cheesy Alfredo
- Papa’s Ribs
- Quesadillas
- Teriyaki Salmon
- Zucchini Lasagna
- Kalua Pork with mashed potatoes
- Cafe Rio Soup
- Balsamic Chicken, tomatoes, and asparagus
- BLT Lettuce Wraps
- Turkey Sandwiches
- Black Bean Soup
- Veggie Fajitas
- Lasagna Soup
- Chicken Taquitos with Guacamole
- Grilled Cheese
- Ranch Pork Chops with Potatoes-Sheet Pan recipe
- BBQ Chicken Salad
- Healthy Beef and Broccoli
- Breakfast Burritos
- Crock Pot Chicken Carnitas with Mexican Rice
- Taco Soup (it’s so easy. Pretty much dumping in cans)
- Pizza (in the shape of a pumpkin)
Did you notice every Thursday I pretty much have sandwiches? Choir has started up and we have a new location for practice which pretty much means we eat in our car while we wait for our oldest to finish up. I think I’m going to try a salad one time. Sometimes we need to do what’s best for the family, and that may mean eating in our car.
