Our family loves having Chicken Pesto Crepes for dinner! Any dinner that lets you build your own plate and customize it is a win-win in our home. We have four amazing children. But they can be quite picky eaters sometimes. Having the freedom to have nicer dinners is a real treat for our family. We are big fans of simple in our home. And pesto is a great flavor to grow up eating. But some of my kids are still developing a mature pallet. And luckily with this dinner my 5 year old can opt to not put pesto on his. But he is going to put all the cheese possible on his crepe so we know he won’t starve.
Have you ever made crepes for dinner? Our family loves them!!! It’s a great way to use leftover chicken and keep everyone happy. The recipe batter is simple enough. Then you can add your favorite toppings and you are ready to go. You can serve a small salad or fresh fruit. But be sure to save room for dessert. Because dessert crepes are a must in our house. They are an amazing breakfast or a perfect dessert. I always love things that look so much more impressive than the effort required.
- 4 eggs, beaten
- 1 1/3 cup milk
- 2 Tbs butter, melted
- 1 cup flour
- 1 Tbs sugar
- 1/2 tsp salt
- chicken pesto
- tomato slices
- pesto
- onions
- cheese, provolone or mozzarella
- Combine the batter ingredients in a blender. Using a ladle, pour a ladle full of batter on a greased heated pan over medium heat. Pick up your pan and twirl it around to distribute your batter. When the edges start to set use a spatula to flip your crepe. Cook both sides and then stack them on a plate.
- Once your crepes are made let your family top their crepes with desired toppings and sauces.
- Extra points if you can flip your crepe without a spatula.
